Enjoy a final taste of summer with this simple, sweet, and tangy cocktail.


For two cocktails:

1 very ripe white peach, mashed

60 ml gin

5g dried sage

300 ml tonic water

Stir the dried sage into the gin, and leave for an hour or two. For higher quality gin (read: not Tesco Value) one hour should do. Leaving the sage in longer will help mask some the flavour of lower quality alcohol. After it’s done infusing, pour the gin through a sieve or a tea towel stretched over a bowl to remove the sage leaves. Rinse the sieve, then push the mashed peach through it to produce a smooth puree. To serve, pour the gin over ice into two glasses. Stir in a large spoonful of the peach puree, and finish with tonic water.  Garnish with peach slices. Enjoy immediately.
